After a season of transformation, Montage Laguna Beach’s Mosaic Bar & Grille recently reopened its doors to reveal a refreshed look and an updated menu that showcases both new and signature dishes. Overlooking the Pacific Ocean and the resort’s iconic Mosaic pool, the outdoor dining destination boasts bright new exteriors and interiors, offering guests an elevated al fresco experience and a menu highlighting California-inspired beach fare.
Updates included the addition of a roof that naturally blends with the craftsman-style architecture of the resort with retractable features for added natural light and ocean breezes while framing the Pacific Ocean views. The roof is slightly pitched to make the space feel larger, and built-in heaters, fans, and a new sound system were also added. “Mosaic Bar & Grille’s refresh elevated the space and took the restaurant from a casual poolside bistro to a sophisticated dining destination where comfort meets elegance,” says Mary Rogers, managing director and area general manager at Montage Laguna Beach. “Adding a roof to the space created an open indoor/outdoor feel that welcomes guests to enjoy the outdoors without the constraints of weather.”
New white ceramic tile flooring sourced from Italy is featured throughout, and the bar’s back area was painted a sage green color to add a touch of warmth, which also made the longstanding mosaic mural of the resort’s coastline located behind the bar stand out even more. Additionally, new modern-meets-comfortable furnishings in white and seafoam green hues further enhance the space, in addition to new tableware with refined yet relaxed coastal-inspired place settings, including new plateware and glassware.
The enhanced lunch and dinner menus at Mosaic Bar & Grille feature a selection of daily fresh-caught seafood, salads, and grilled sandwiches, along with a variety of cocktails, mocktails, and an impressive wine list. New menu items to note include the Daily Ceviche Mixto, Mosaic Grand Seafood Platter, Avocado Fries, Ora King Salmon, Surf & Turf, and Seafood Linguini Pasta.
Offering 1,512 square feet of space, Mosaic Bar & Grille can accommodate private events and groups of up to 56 people. With the Pacific Ocean as its backdrop, the outdoor space is a prime setting for cocktails and dinners, especially during sunset hour. A special banquet menu is available for group events and includes an array of dishes prepared by David Serus, executive chef at Montage Laguna Beach. Group dining options range from plated meals and themed buffets to boxed lunches and a special wellness menu, among others.
