Sabo Appointed Food and Beverage Director at The Hollywood Roosevelt

Daniel Sabo brings over 26 years of hospitality experience to the hotel’s collection of restaurants and bars.

The Hollywood Roosevelt, a boutique hotel with a storied past in the West Hollywood neighborhood of Los Angeles, appointed Daniel Sabo as its new director of food and beverage.

With his experience, Sabo will oversee the culinary operations at the hotel’s iconic 1960s-style Tropicana Pool, its upscale burger joint 25 Degrees, the al fresco Rosy Cafe, and the recently revived Cinegrill Theater famed for hosting Hollywood elite.

Originally built in 1927 and situated along the Hollywood Walk of Fame, the property has a longstanding history of hosting the likes of Marilyn Monroe, Charlie Chaplin, and Clark Gable, and was also the site of the first Academy Awards in 1929. The venue itself reflects classic Hollywood with the sense luxury seeping out of every room, from the ornate chandeliers hanging from the ceilings in 25 Degrees to the chic, fashionable furniture in the lobby.

This feeling is carried throughout the hotel’s eateries as well, and Sabo looks forward to further emphasizing delicious luxury in the hotel’s cuisine. Originally part of the opening team as a bartender at Five Leaves in Brooklyn, New York, Sabo worked his way up to general manager and later established ISA in Brooklyn in partnership with Chef Ignacio Mattos in 2012—which secured a James Beard Award nomination.

Sabo moved on to Ace Hotel Downtown in Los Angeles as director of beverage and bars with full creative control of its five culinary concepts alongside spearheading the “infrastructural build-out of bars and kitchens for future Ace Hotels,” according to a prepared statement from The Hollywood Roosevelt. He then took on the role of beverage director at Hotel Figueroa before becoming the corporate director of food and beverage at Palisociety Hotels & Residences.

Needless to say, Sabo’s culinary experience speaks for itself.

In his most recent role, prior to The Hollywood Roosevelt, he served as the executive assistant manager with a focus on food and beverage operations at Fairmont Century Plaza, known for opening the hotel’s Michelin-recognized French brasserie Lumiere and hosted his first Oscar nominee luncheon and Critics Choice Awards. With such a rich history in working on noteworthy culinary concepts across the country, Sabo has already begun elevating The Hollywood Roosevelt’s dining experience, redesigning 25 Degrees and reimagining the Library Bar as an opulent cocktail and whiskey bar.
