In early April, longtime Kimpton Hotels & Restaurants culinary professional David Gross was appointed as executive chef at Denver’s Kimpton Claret Hotel to lead the property’s two food and beverage outlets: Saverina, an Italian restaurant, and Halo Rooftop Bar. Gross has been with the Kimpton brand—which is part of IHG Hotels & Resorts based in Windsor, England (with a major U.S. office in Atlanta)—for 18 years, including stints as executive chef at both Kimpton Hotel Monaco Denver and Kimpton Tryon Park Hotel in Charlotte, North Carolina.

“We are thrilled to welcome David Gross to the team [at Kimpton Claret Hotel], where he will take the helm of the culinary program at Saverina and Halo Rooftop Bar,” says Nikki Glass, regional vice president of operations at the property, in a prepared statement. “David has been executive chef at Panzano, [an Italian restaurant] at our sister property, Kimpton Hotel Monaco Denver, for the last five years and we are excited for him to put his unique, Italian, and farm-to-table flare on our menus.” In addition to overseeing all culinary operations for Saverina and Halo Rooftop Bar, Gross will manage banquets and catering for the property.
Saverina serves up a menu of Italian-inspired plates, including specialty pizzas, pastas, and meat dishes like roasted branzino (European sea bass). The restaurant also has a private dining room that fits up to 20 attendees seated and 30 reception-style. Halo Rooftop Bar sits on the hotel’s 19th floor and provides a lineup of shareable menu items and craft cocktails. Small groups can reserve private seating around one of the rooftop’s fire pits, and full buyouts of the bar are available for larger gatherings.
Beyond its culinary offerings, Kimpton Claret offers 190 overnight rooms and more than 10,000 square feet of meeting and event space, including the 3,425-square-foot Mohagany Ballroom, the 1,807-square-foot Juniper Ballroom, and the 611-square-foot Marcato Boardroom, among others.
