On Friday, April 19, BrewDog Denver celebrated its grand opening in the heart of Denver’s lively RiNo district, unveiling a dynamic 10,000-square-foot space with a spacious patio, 3.5-barrel brewing system, and a connected dog park.
The multinational brewery and pub chain was founded in Ellin, Scotland, in 2007 and now has over 100 locations worldwide. Opened in partnership with Hop Dragon Holdings, BrewDog Denver marks the first of BrewDog USA’s franchised locations.
“This is an exciting step for BrewDog USA as we welcome our first-ever franchised location stateside,” BrewDog USA CEO John Graham says, in a prepared statement. “We have worked with our partners for the last two years on bringing BrewDog to Denver and we’re looking forward to becoming a part of the community’s vibrant brewing scene.”
The special collaboration with Hop Dragon Holdings, a family-owned holding company with deep roots in Mexico, is poised to bring a unique fusion of heritage to the Scotland-based brewery. Led by Juan Carlos Mondragón, owner of five McDonald’s franchises in Mexico, Hop Dragons Holdings extends its family-run nature to BrewDog Denver, where his daughter Paloma Mondragón serves as general manager of the brewery.
Alongside classic pub fare like burgers, giant pretzels, salads, and wings, BrewDog Denver’s menu will also feature cuisine inspired by the Mondragón family’s heritage, including carnitas tacos with avocado-tomatillo salsa, carne asada, cochinita pibil tacos with slow-cooked pulled pork, and al pastor tacos infused with pineapple.
To mark its grand opening, BrewDog Denver hosted a lively celebration complete with bagpipers and a mariachi band—an eclectic fusion of Scottish and Mexican traditions that encapsulated the spirit of the multifaceted establishment.
