Gaylord Rockies Wraps Up Phase Two Renovations

The Gaylord Rockies Resort & Convention Center in Aurora completed the second portion of its multiyear enhancement project at the end of last year

The Gaylord Rockies Resort & Convention Center in Aurora completed the next phase in its expansive enhancement project at the end of last year. This final portion of the phase-two renovations included the debut of fresh culinary outlets planners can now consider for group dining experiences, including Garden and Grain, Copper Table, and the reimagined Old Hickory Steakhouse.

Garden and Grain spotlights organic ingredients and sustainable cooking practices, avoiding fryers and refined foods to emphasize natural flavors. Notable menu items include grain bowls, stone-fired pizzas, and vibrant salads—specifically made without seed oils, refined sugars, or processed elements. In line with its sustainability initiatives, the eatery also composts food waste, harvests honey from on-property beehives, and sources from area farms including Superior Farms and Hazel Dell Mushrooms.

Copper Table is about all things Centennial State history, delivering a modern twist on classic Western dishes. Signature menu items include bison meatloaf and bison burger, rotisserie duck, and Superior Farms lamb, complemented by a selection of cocktails and craft beers from Telluride Brewing Co., Dry Dock Brewing Co., and Prost Brewing Co. Throughout the space, warm wood is accented by copper alongside art and furniture that echo Colorado’s agricultural roots.

Old Hickory Steakhouse, Gaylord Rockies’ flagship restaurant, features a wraparound bar, intimate seating areas, a striking fireplace, belt buckle-inspired lighting, and an eye-catching mural made from dyed bison hides. Its renovation included an expanded menu, with items including prime-grade beef and domestic wagyu, truffle creamed spinach, and the Mile High Roller Baked Potato.

“Each new concept was designed with intention—from the ingredient-driven menu at Garden and Grain to the refined Western flavors at Copper Table and the reimagined elegance of Old Hickory Steakhouse,” says Suzy Hart, general manager of Gaylord Rockies Resort & Convention Center, in a prepared statement. “This marks a defining moment in our resort’s evolution, elevating the guest experience while setting a new standard for hospitality in the region.”

Phase one of the resort’s enhancement plan was finished in 2023 and included the addition of dining terraces to the steakhouse and the Mountain Pass Sports Bar. Early phase two additions included Embers Lodge Bar, The Fortunate Prospector, and the Mountain View Pavilion event space, all of which began in 2023 and wrapped up mid-2024.
