Colorado’s neighbor to the west, the Beehive State of Utah, has seen lots of action recently in the world of lodging and events news. Announced at the end of January, Waldorf Astoria Deer Valley Resort and Residences is slated to open in 2028 in Park City’s Deer Valley East Village, a large hospitality and commercial development anchored by Deer Valley Resort. According to a Hilton Hotels & Resorts press release on the matter, the opening will mark the “first major public alpine ski resort to be developed in North America in over 40 years.”

The property will come out of a partnership between Hilton and New York City-based Extell Development Co., a full-service real estate developer. It will feature 132 guest rooms and 105 private residences, the latter of which will be available for purchase. Additional amenities will include ski-in/ski-out access, a 15,000-square-foot spa, an outdoor pool and hot tub, several culinary outlets, and 11,300 square feet of meeting and event space.
“The signing of Waldorf Astoria Deer Valley Resort and Residences marks a major milestone in Hilton’s growing luxury portfolio across the Americas,” says Kara Randall, vice president of luxury and mixed-use development in North America at Hilton, in a prepared statement. “We’re proud to partner with visionary owners to introduce this ski-in/ski-out resort to Deer Valley East Village, complementing the upcoming Canopy by Hilton at Deer Valley, which is expected to open this [summer].”

Also within Deer Valley East Village, the Grand Hyatt Deer Valley will welcome Sushi by Scratch Restaurants: Park City, an omakase-inspired, tasting-menu culinary concept opened in early February. The restaurant joins the resort’s several other dining options, including Remington Hall restaurant, Hidden Ace cocktail lounge, and Double Blacks après-ski cafe, among others. The new Sushi by Scratch Restaurants features a chef-guided counter dining experience with a limited number of seats available three times per day at 5:00 p.m., 7:15 p.m., and 9:30 p.m., Wednesdays through Sundays. Planners can either look to reserve seating for a small group or encourage attendees to book a reservation on their own between meeting sessions. Sushi by Scratch Restaurants: Park City is part of the Michelin-starred Scratch Restaurants Group based in Austin, Texas, and founded by husband-and-wife chef duo Phillip Frankland Lee and Margarita Kallas-Lee.

South of Park City in Midway, Homestead Midway Utah is an expansive resort development in the Wasatch Mountains that recently announced the debut of its latest meeting and event venue coming this August: The Barn. It will span 17,636 square feet of indoor and outdoor space, comprising 11 individual venues, including a grand ballroom and two event lawns. Architectural and design elements will involve warm wood interiors and high-beam ceilings, complemented by striking mountain views through tall windows.

The Barn joins Homestead’s broader menu of event spaces, including the 280-square-foot Parlor room, the 743-square-foot Foyer space, the 2,880-square-foot Garden Room & Patio, and the 1,584-square-foot Timpanogos Room, among others. Additional resort amenities include luxury guest rooms, suites, and cottages; golf and putting courses; and four culinary outlets.
Park City is about 37 miles outside Salt Lake City, and groups from Colorado have easy access to Salt Lake City International Airport via several regular direct flights from Denver International Airport. Midway is about 50 miles from Salt Lake City Airport.
