
Perched atop Populus Denver, the first carbon-positive hotel in the country, is Stellar Jay, a rooftop restaurant on the 13th floor with plenty of options for hosting meetings and events. The culinary destination is among several gathering spaces available at the hotel, which range from traditional boardrooms and semiprivate lounge spaces to stylish suites. At Stellar Jay, planners have three options for booking their gathering.

A full buyout of the restaurant includes access to the main dining room, a private dining room, the lounge, bar, and terrace—which accommodates up to 150 attendees and works well for large holiday celebrations and corporate events. The private dining room is a fully enclosed corner space with wraparound windows that hosts up to 30 reception-style, 24 seated, or 14 in a boardroom configuration. For something a bit more casual, the Stellar Jay Lounge semiprivate space suits groups of up to 30 reception-style or 18 seated and is located adjacent to the bar with access to the terrace. This option is well equipped for team dinners and networking mixers.

In line with the hotel’s zero-waste initiatives, Stellar Jay provides a menu rooted in sustainable practices, focusing on wild game, seafood, meats, and in-season produce to maximize food-waste diversion. The restaurant partners with BioGreen 360 (an eco-friendly waste-management service based in Stratham, New Hampshire) and A1 Organics (a composting company with several offices in Colorado) to compost all food waste and return that compost to nearby farms to support regenerative agriculture practices. Menu items at Stellar Jay include beef carpaccio, bison from Rock River Ranches in Commerce City, charred beets, and spiced apple zeppole, among several others. Drink offerings include cocktails, beer, and wines, as well as nonalcoholic beverages like sodas, teas, coffee, and more. Upon planners’ request, Populus Denver can provide postevent reporting on how much food waste was diverted for their events.

Additional event spaces at Populus Denver include Pasque Restaurant; The Hollow, Enclave, Grove, Overlook, and Commons rooms; and the 13th-floor Pando Suite. Planners also can opt for a four-room combination of the Grove, Commons, Overlook, and Enclave rooms to create a total of 2,000 square feet of space for up to 120 people reception-style. The hotel offers 265 guest rooms and amenities such as refillable water stations, a fully equipped gym, valet parking, and pet-friendly accommodations.
