James Beard Award-winning Chef Tyson Cole opened Uchiko Cherry Creek on Feb. 17 in Denver’s Cherry Creek North neighborhood. Uchiko, which can translate to “child of Uchi” in Japanese (Uchi is the name of its parent restaurant), pairs smoke and char with clean Japanese flavors across hot and cold dishes. Diners indulge in hearth-grilled plates like oysters with koji creamed spinach, post oak-grilled sea bass with brown butter dashi, and four-times-seared Denver steak, alongside fresh fish flown in daily and shareable dishes like the softshell crab roll and roasted lobster with umeboshi butter. The sumptuous flavors extend to a distinctive bar program featuring craft cocktails, a curated list of Japanese whisky and sake, and an extensive wine list.
Located in the former Ginny Williams Gallery at 299 Fillmore St., Uchiko Cherry Creek honors the legacy of the noted Denver art collector and philanthropist Ginny Williams through rotating art installations that preserve the location’s artistic roots. A 14-seat public dining room and the 14-chair sushi bar provide memorable options for smaller groups.
