The RiNo Art District eatery celebrates the culture and flavors of Italy’s Emilia-Romagna region

The team behind Michelin-recommended Restaurant Olivia in Denver opened their newest
concept, Dear Emilia, in Denver’s RiNo Art District on Jan. 29. Dear Emilia is the three co-owners’ love letter to Italy’s Emilia-Romagna region, widely considered the agricultural heart of northern Italy. Chef Ty Leon, Bar Director Austin Carson, and Hospitality Director Heather Morrison have traveled to Emilia-Romagna together for years, forming lasting relationships with producers and falling in love with the region’s generosity and artistry.

Dear Emilia honors those connections by working with these trusted Italian purveyors, as well as growers and makers around Colorado, the Mountain West, and the globe who share the team’s commitment to sustainability and responsible stewardship. The culinary experience unfolds inside a 3,700-square-foot space that includes seating for 88 people, a private dining room for up to 22, and six-seat chef’s counter. The 10-seat patio also is
available.
