Growing, Preparing & Sharing Locally

Not only does The Broadmoor operate 20 year-round restaurants, cafes, and lounges, but the Colorado Springs resort is also accustomed to creating memorable dining experiences for groups, whether for a small board meeting or a multiday conference. The common factor is a major focus on products that are raised locally and that showcase Colorado.

Located on the 5,000-acre main campus, Broadmoor Farms grows herbs and produce in a greenhouse and outdoor garden. The Broadmoor’s private ranch, Eagles Nest Ranch near Greeley, raises wagyu beef exclusively for the resort and has more than 40 beehives that produce about 1,500 pounds of honey annually.

Examples of seasonal favorites from around the state highlighted on Broadmoor menus include Palisade peaches, Rocky Ford melons, Olathe sweet corn, Pueblo asparagus and chiles, and San Luis Valley quinoa, potatoes, and onions. Examples of other notable Colorado purveyors and ingredients include RedBird Farms chicken, Kalera lettuces and greens, and Raquelitas Tortillas chips, tortillas, and taco shells.

Following the local mindset from start to finish, The Broadmoor works closely with the Springs Rescue Mission to donate unused banquet items. More than 9,000 pounds of food were donated last year alone.
