The Ritz-Carlton, Chicago, adopted a policy to further prioritize food waste reduction, alongside energy and water conservation, as a way for meeting planners to divert 100% of event food waste and have it repurposed into a sustainable, natural resource: compost. The hotel is even offering attendees the option to take a small bag of that compost home after the event to use in their gardens. The overall sustainability initiative is headed by the hotel’s management, Sage Hospitality, in partnership with BioGreen360, a food waste management solutions and technology company. These initiatives will also be introduced at other Sage Hospitality-managed hotels nationwide.
