Karon Takes Helm at Borough and Parlour

Culinary veteran introduces new menu influenced by the flavors he loves and the Paraguay of his birth.

Minneapolis-based Jester Concepts has brought on William Karon as chef de cuisine at the city’s Borough and Parlour in the North Loop. Karon joins the restaurant with more than 17 years of culinary experience, working for many of the best restaurants in the Twin Cities. Marking his arrival, Karon has launched a new menu.

“We are very excited about the energy that William brings to the Borough team as well as his history in the kitchen,” says Mike DeCamp, operations director of Jester Concepts. “I am impressed by his new menu and look forward to his future plans. I’m confident our guests are in for a treat, and I couldn’t be happier.”

In his new role, Karon will oversee both of the restaraunt’s kitchens, focusing on team building and recipe development. Karon’s recent experience includes popular Twin Cities restaurants such as St. Genevieve, Kado No Mise, Esker Grove at the Walker Art Center, and Burch Steak. Self-taught, Karon credits his many mentors across his career for shaping his culinary style.

Born in Paraguay, Karon cooks with the flavors he loves most in tandem with processes influenced by his country of birth. New menu items draw inspiration from his heritage along with the changing seasons. Dish highlights include Bronzino Aguachile; Celery Root Gnocchi; Duck with oranges, parsnip, fingerling potatoes, and persimmons; and Culurgiones with potatoes, smoked tomatoes, and shiso.

“The team at Jester and Borough is nothing short of amazing, and I’m thrilled to have joined such a dedicated and supportive group,” says William Karon. “I’m a big believer of putting people first—so I’m investing greatly in my staff to help them continue to grow and achieve their goals, as my culinary mentors did for me.”
