This cocktail adds a delicious tropical twist to a classic beverage, the Negroni. Mark and Kristen Anderson, founders of Minneapolis-based Drake’s Organic Spirits, named the cocktail in honor of their travels to the Galapagos Islands, where they were inspired to give back after seeing the impact of COVID-19 on the local economy and sensitive ecosystems. Drake’s donates a portion of every sale to the Galapagos Fund.
Ingredients
- 1.5 ounces Drake’s Spiced Rum
- 1 ounce Campari
- .5 ounce simple syrup
- 1.5 ounces pineapple juice
- .5 ounce lime juice
- 1 slice of pineapple
- 2 pineapple leaves
Directions
Add the first five ingredients to a cocktail shaker filled with ice, and shake vigorously for at least 30 seconds or until chilled. Strain into a cocktail glass. Garnish with a fresh pineapple slice and pineapple leaves.
