Restaurant Recommendation: La Panadería

By R. Chad Dove

La Panadería, a popular bakery in north San Antonio, recently opened a second location downtown. The newest La Panadería is just minutes from The Riverwalk, boutique hotels, the Henry B. Gonzàlez Convention Center and Majestic Theater. For event planners, La Panadería offers several catering options to give group meeting attendees a true taste of Alamo City.

Brothers José and David Cáceres opened La Panadería in San Antonio in 2014. The bakery specializes in handmade bread and pastries inspired by Mexico’s Golden Era, or Epoca de Oro. The brothers also draw influence from French, Italian and American breadmaking techniques. The Cáceres’ knowledge and passion for baking was born when they sold loaves of their mother’s fresh baked bread on the streets of Mexico City as young boys, and was formally completed at Le Cordon Bleu Mexico.

A 48-hour fermentation process is part of La Panadería’s unique approach to breadmaking. Details like this result in pastries and breads that are one of a kind. Menu items like the Tequilla Almond Croissant and a wide selection of Pan Dulce— made with La Panadería’s 20-year-old sourdough starter—have given the bakery an innovative reputation throughout San Antonio.

In addition to offering a wide selection of artisan baked goods, The Cáceres brothers recently developed a world-class pastry program for La Panadería with well-known French pastry chef, Amaury Guichon. New specialty items include dark chocolate layered cakes, glazed raspberry tarts, gold-dusted blueberry cupcakes and more.
