La Prima Catering Company has a reputation of going green—and then some. Pennsylvania Meetings + Events talked to President Dave Evans to find out what it takes to be an all-encompassing greencertified catering company.
PAM+E: How does La Prima Catering Company operate?
DE: Our company operates five sustainable kitchens in both the Washington-Baltimore area and Pennsylvania. We offer a variety of levels of services, including drop-off corporate catering and event catering.
PAM+E: What exactly is green catering?
DE: Green catering is a day-in-and-day-out commitment to being as sustainable as possible, starting from behind the scenes to the partner farm to the dropoff catering. Everything our company uses is compostable or recyclable in some way. We utilize the Green Restaurant Association to remain environmentally responsible every step of the way.
PAM+E: What are some common misconceptions about green catering?
DE: Green catering isn’t just farm-to-table practices—it starts with farm-to-table but there is much more to it than that. It’s farm-to-table, the renewable energy from windmills, low-flow toilets and faucets, the energy-efficient vans and the assortment of recycling and compost bins in the kitchen. Each of our five separate kitchens is sustainable to their unique capabilities and locations.
