Hotel Jackson, a family-owned luxury boutique hotel in Jackson, Wyoming, is gearing up for a season of changes in 2025 —beginning with the appointment of Michelin-starred chef Malyna Si last September to lead all food and beverage operations as executive chef. Si was appointed ahead of property additions such as a fresh signature restaurant, new luxury suites, and a spa and wellness center. The new amenities are all slated to open this summer.
Among her myriad culinary duties at Hotel Jackson, Si manages the current on-site restaurant Figs, which serves up an array of Lebanese and Mediterranean fare inspired by the heritage of the hotel’s owners, the Darwiche family. Notable items diners will find on the menu include chicken kafta kebab, chicken shawarma, baked kibbeh, and grilled eggplant, among many others. Si has made a name for herself in recent years as the only woman to lead a Michelin-starred restaurant in Florida—Capa Steakhouse at Four Seasons Resort Orlando at Walt Disney World Resort—and will imbue her culinary expertise into Hotel Jackson’s upcoming Basque-inspired signature restaurant opening this summer.
“Jackson Hole is such a special and inspiring destination, and I love creating bespoke experiences and lasting memories through my cooking,” says Executive Chef Si in a prepared statement. “The new restaurant will be a celebration of the senses, a place where all are welcome to truly indulge.” Inside, the new outlet will feature 150 seats and an open kitchen with a wood-fire grill and tableside cart service.
A collection of new luxury suites and a spa and wellness center will also open this summer as The Retreat at Hotel Jackson, an expansion designed by FFKR Architects (Salt Lake City) with interiors by TruexCullins Architecture and Design (Burlington, Vermont) and Parts and Labor Design (New York City). The Retreat, which will be the home of the hotel’s upcoming signature restaurant, will sit next to the original 55-room Hotel Jackson building and comprise nine luxury suites, a 2,000-square-foot rooftop bar and lounge featuring views of nearby Snow King Mountain, the 7,000-square-foot spa-and-wellness center, an infinity pool, and a salon.
“This has been a years-long labor of love, and we are thrilled to finally unveil these incredible new offerings to our guests,” says Sadek Darwiche, general manager of Hotel Jackson. “Our goal has always been to provide an intimate, unparalleled guest experience, and these enhancements, including a new restaurant helmed by the incredibly gifted Chef Si, are set to transform the landscape of Jackson Hole.”
When gathering in Jackson, planners will find a selection of meeting spaces available at Hotel Jackson as well. The Deloney Room works best for small board meetings of up to 14 people, and Figs can host a reception of up to 50. The Cabin is an independent venue operated by the hotel and located just across the street, able to accommodate up to 30 attendees.
