Lake Washington Hotel Expands Staff & Offerings

The Hyatt Regency Lake Washington at Seattle’s Southport adds to its event dining options and welcomes two industry professionals to its team

The Hyatt Regency Lake Washington at Seattle’s Southport is located along the southern banks of Lake Washington, southeast of downtown Seattle. During the month of April, the property expanded its event dining opportunities with a new banquet menu spotlighting Seattle-area businesses and classic Pacific Northwest flavors, and also welcomed two staff members to its team.

In early April, Hyatt Regency Lake Washington debuted its customizable “Taste of Seattle” banquet menu, available to planners hosting at the hotel. The menu is centered on quintessential regional flavors and includes products from several Seattle-area companies. “Groups can enjoy the natural bounty of the Pacific Northwest with customized event menus that showcase fresh flavors found throughout the region,” says Brittany Martin, banquet chef at the hotel, in a prepared statement. “By working closely with local farms and purveyors, we strive to deliver the highest-quality, farm-to-table dining experiences that are delicious, sustainable, and showcase our incredible location.”

Categories within the “Taste of Seattle” menu include the following:

  • “It Can’t Rain All the Time,” featuring a selection of Seattle favorites including Ivar’s clam chowder, macaroni and cheese from Beecher’s Handmade Cheese, sausage and shrimp skewers from Uli’s Famous Sausage, miniature beef and cheddar piroshki selections, and candied salmon served with caper-lemon cream cheese on rye toast

  • “Pike Place Farmers Market Bar,” a selection of regional cuisine with an assortment of regionally sourced produce and other goods from area farms including greens, feta cheese, blueberries, carrots, peppers, cherry tomatoes, radishes, and more
  • “Mini Buns,” offering a collection of Asian cuisine to honor the Seattle region’s Asian culinary influences, with menu items including various flavored bao buns such as teriyaki-glazed crispy chicken, cured pork belly, and sriracha-glazed shrimp, among several others
  • “Seattle Sweets,” a curated dessert spread including regionally beloved treats featuring a Starbucks latte-flavored panna cotta with chocolate crumble (the first Starbucks location is located at Seattle’s Pike Place Market), Washington cherry hand pies, chocolate-dipped Honeycrisp apple slices, and truffles from Seattle Chocolate Co.

In addition, toward the end of the month, Hyatt Regency Lake Washington named Jordan Houser as outlets director. She most recently served as front office manager at the Grand Hyatt Seattle in downtown and brings more than a decade of hospitality experience to the Lake Washington property. “I am thrilled to join the incredible team at such a beautiful property as Hyatt Regency Lake Washington,” says Houser. “It is my goal to not only lead the hotel to financial success but also support each member of my team as they reach their full potential.”

Shortly thereafter, the hotel appointed Danae Johnsen as wedding and event planner, tasked with helping couples and planners organize weddings and events on-site. She says one of her main goals is to help couples feel relaxed and excited as they gather with their loved ones to celebrate their union. “I’m particularly looking forward to experiencing life on the lake this summer when wedding season is in full swing and creating memorable, personalized experiences that truly reflect each couple’s unique story,” she adds. Johnsen brings more than a decade of event-planning expertise to her role at the hotel, the majority of which stems from planning events in the Seattle area.
