Two New Hotel Restaurants in the Seattle Area

Rendition, a new restaurant and bar, has opened its doors on the ground floor of Hotel Interurban in Tukwila, Washington, just minutes from downtown Seattle. Offering shareable plates and aromatic spirit-driven cocktails, the menu highlights include graze boards, hibachi skewers of braised pork belly, marinated tiger prawns, dry-aged steaks and smoked sablefish. Showstopping desserts include Thai Bananas Foster flambé, served in a cast-iron skillet with a tableside pour of ginger-infused rum; Berries & Bubbles, with sea salt meringues, macerated berries and PopRocks, served with tableside pour of brut Champagne for a crackling, sensational experience; and Campfire Profiterole, served under a clear glass cloche, cream puffs are lightly smoked with apricot crème and dark chocolate mousse with activated charcoal that releases smoke when the cloche is lifted. The restaurant has a large inviting dining room, spacious bar, and sprawling outdoor patio with firepit.
