Cocktails with a View in Seattle

Hyatt Regency Lake Washington at Seattle’s Southport features more than 60,000 square feet of meeting and event space, including several venues with lakefront views. Among the loveliest views are those offered at the signature restaurant, which is aptly name Water’s Table. There are several options for group dining here, including a heated, fully covered terrace that’s open 365 days a year. Featuring produce and seafood from the Pacific Northwest, Water’s Table also has a creative list of cocktails or “the hard stuff,” as the menu puts it. While some holiday drinks like the Mo-HOHOHO-jito and the Oatmeal Cookie dessert cocktail have gone the way of Santa, a standout is the gin-forward Royal Pear, made with rosemary, lemon, pear and Domaine de Canton, a ginger-flavored French liqueur with a cognac base.
