Housed in a former factory, the adjoined restaurants—Popol Vuh and its fast-casual counterpart Centro at Popol Vuh—share an entrance but diverge on fare and focus. Centro, a bright, festive quick-service taco bar offers fan favorites like ceviche, Nopales and pescado (fish) tacos, and colorful craft cocktails, including the Electric Bunny—a striking neon pink prickly pear caipirinha. 

INGREDIENTS
— 2 oz. cachaça
— 5 oz. prickly pear puree
— 75 oz. lime juice
— 25 oz. simple syrup 

DIRECTIONS 
Measure all ingredients and shake in a cocktail shaker. Relax and enjoy!

INGREDIENTS:
—2 oz. Plantation 3 Stars Rum
—.5 oz. Lifesaver syrup*
—.75 oz. lime juice
—2 oz. club soda

DIRECTIONS:
Combine all ingredients, except soda, in a small shaker tin and add ice. Shake 20 times. Strain into a rocks glass over fresh ice, top with soda and garnish with a lime wheel.
