• Signature Drink: Kalahari West African Ginger Mojito

Not everyone can take two weeks off for a trip to Africa, but if you’re feeling like you need a change of pace without the long trip, visit Kalahari Resort in the Pocono Mountains. This resort has America’s largest indoor water park in addition to one of the state’s top three largest convention centers, as well as a full-service hotel, spa and multitude of restaurants ranging from a buffet and coffee shop to upscale comfort food. The spirit of Africa is everywhere—from the décor down to every last detail, so it’s no wonder they offer an African spin on this Cuban cocktail. 

Ingredients
—2 oz. Don Q Mojito
—mint leaves
—ginger root
—peppercorn
—club soda 

Directions
Muddle together the mint leaves, ginger root and peppercorn. Add 2 oz. Don Q Mojito and top it with club soda.

As the number of vaccinations across the country increases, the amount of live events and gatherings will hopefully rise with it. However, that doesn’t mean the way people gather will go back to normal instantly: there may be an adjustment period before bars, theaters, stadiums and churches are all full of people again.

Round Rock is now home to America’s largest indoor water park: Kalahari Resorts and Conventions. The venue showcases a safari theme and includes 22 life-size sculptures that weigh up to 10,000 pounds each and measure up to 10 feet tall. The collection includes 12 elephants, seven zebras, a mother and baby rhinoceros, and a cape buffalo.
