• Signature Drink: Pitch Black

“I sought to incorporate contrasting visuals and flavors in Fine China’s beverage program. The solid black color of the Pitch Black has guests assuming that it would taste dark and rich. However, this drink is actually refreshing and light in flavor (and has quickly become one of our favorite cocktails in the restaurant).” —Kyle Hilla, beverage director of The Statler

INGREDIENTS:
—.25 bar spoon activated charcoal
—.5 oz. simple syrup
—.75 oz. lemon juice
—.5 oz. St-Germain
—.5 oz. Suze
—1.5 oz. Fords Gin

METHOD:
1. Combine all ingredients in shaker tin with ice and shake.
2. Strain into a rocks glass and garnish with a flower.

When life hands you lemons (or lemon juice), make a Northwest Huckleberry Lemon Drop.

> 1.5 oz. Wild Roots Huck Vodka
> .75 oz. Cointreau
> .75 oz. lemon juice

Build like a lemon drop in a shaker. Shake and strain, serve neat in a martini glass with sugar rim.

MIX: Two parts Honeyville Chokecherry Lime Mixer to one part Honey House Distillery Colorado Honey Whiskey.

ADD: Club soda or sparkling water to taste. Also can use ginger ale or ginger beer.

FINISH: Press equal parts fresh basil and mint leaves and add to beverage. Serve over ice.
