Signature Drink: Paper Airplane

Nestle into fall with this frothy whiskey drink from Marshall’s Landing. The “Paper Airplane” is just one of many craft cocktails offered by the new lounge and restaurant located in the Merchandise Mart. Customers will also find chef-inspired seasonal menus, artisanal coffee and a fullservice bar in a casual, vibrant atmosphere. The spot, named for the famous Marshall Field and operated by the DMK Restaurant group, also has catering options, private meeting selections and customized event spaces available.

Celebrating its 90th anniversary this summer, Seattle’s Mayflower Park Hotel started life as the Bergonian Hotel on July 16, 1927, and has been in continuous operation ever since. The hotel was named after original owner Stephen Berg and his love of The Oregonian newspaper. In salute to its 90 years of service and with a nod to its past, Mayflower Park created The Bergonian cocktail. Raise a glass to honor an icon in Seattle’s hospitality history.

Signature Drink: Gin is Vodka, Green with Envy

INGREDIENTS
—1.75 oz. CapRock Gin
—.75 oz. Lillet Blanc
—.5 oz. rosemary simple syrup
—.5 oz. lemon juice
—4 sugar snap peas, muddled, and extra for garnish

DIRECTIONS
1. Muddle snap peas with ingredients in a Boston shaker.
2. Shake vigorously.
3. Double strain into a rocks glass over ice.
4. Garnish with sliced peas.

Red Cow might be best known for burgers, but you’d be remiss to ignore the cocktail menu. Crafted by Beverage Director Ian Lowther, drinks range from beer cocktails (called boilermakers) to shaken or stirred specialties. Lowther created the following boozy concoction just for Minnesota Meetings + Events magazine. 

INGREDIENTS:
—1 t. simple syrup
—1/3 oz. fresh grapefruit juice
—1/3 oz. fresh lemon juice
—1/3 oz. Tattersall Grapefruit Crema
—1/3 oz. St. George Pear Brandy
—1 2/3 oz. Lunazul Reposado Tequila

This is the kind of cocktail you don’t want to attempt to reproduce at home. To create that rosemary mint foam you will need both a nitrous-oxide whipper and an eyedropper (to dispense precisely two drops of rosemary essential oil). It’s the type of complex specialty drink you can find only at specialty bars, in this case the newcomer Mezcal Bar, which is tucked behind a curtain at the West Hollywood restaurant Laurel Hardware, and features nearly 100 different Mezcals sourced from more than 50 distillers.

Guests of the JW Marriott in Chicago can feel better about indulging in an after-dinner drink when choosing selections from the hotel’s Cocktails with a Purpose program. Recipes like “Green Mountain Dynamite” were created by Tippling Bros. with the guidance of nutritionist Keri Glassman. The idea: to create healthier cocktails that still provide a tasty experience

INGREDIENTS
—1.5 oz. Absolut Citron
—.75 oz. fresh lemon juice
—.75 oz. maple syrup
—a pinch of cayenne powder
—3 dashes of Urban Moonshine Organic Maple Bitters

Maritime Parc, located at the marina at Liberty State Park in Jersey City, is well known for its stunning views of Manhattan and its elegant food, but its cocktail list is really worth perusing. These drinks aren’t just delicious—most of the specialty cocktails are inspired by and named for famous shipwrecks off the coast of New Jersey or New York.

The Spanish steamer Vizcaya was headed for Havana on Nov. 1, 1890, when it collided with a coal schooner, Cornelius Hargrave. The wreck is located off the coast of New Jersey about 25 miles south of the Manasquan inlet.

Signature Drink: Funkin’ It Up

Ferndale’s Otus Supply opened last year, and named this cocktail after a song by New Orleans’ Rebirth Brass Band.

INGREDIENTS:
—1.5 oz. Remy Martin 1738
—0.5 oz. Tempus Fugit Gran Classico
—0.75 oz. lemon sherbet*
—3 dashes hazelnut bitters*
—lemon twist for garnish
—Herbsaint

DIRECTIONS:
1. Rinse a Nick and Nora glass with Herbsaint.
2. Stir all other ingredients in a mixing glass.
3. Strain cocktail into Herbsaintrinsed glass.
4. Garnish with lemon twist.

Earlier this year, Matt Klette, the West Coast ambassador for Redemption Whiskey, gathered Los Angeles food and beverage influencers to introduce them to the small-batch Redemption Rye. The 95-percent rye is aged in new American charred oak barrels, with each bottle hand-numbered to reflect the batch. Clark Street Bread created a special sandwich for the occasion; called “When Pigs Rye,” the sandwich featured roasted pork, spicy mustard and whiskey dill pickles served open face on Danish rye bread infused with Redemption Whiskey.

—1.5 oz. Norseman Gin
—.5 oz. lemon juice
—.25 oz. pine scented grenadine
—top with cava
—3 dashes Jamaica #2 bitters
—serve in a flute glass
