By Beth Buehler

With 25 years of experience and 12 James Beard award nominations, Sam Fox is entering into the hotel business as owner, operator, and manager for the first time. The Global Ambassador in Phoenix is slated to open its doors to groups and guests in mid-November and feature five culinary outlets and a members-only restaurant.

Fox has opened 140 restaurants across the country under the umbrella of Fox Restaurant Concepts, where he remains CEO. The restaurant concepts at The Global Ambassador are influenced by his extensive international travels and spotlight favorite dishes and flavors from around the world from the Mediterranean region of France, Italy, and Spain to the tastes of Peru and Mexico. The hotel is part of Fox’s company Author & Edit Hospitality that also includes The Twelve Thirty Club in Nashville.

The Global Ambassador also will feature 141 guest rooms, a wide range of indoor and outdoor meeting and event space, and private dining rooms. A 9,000-square-foot wellness center with two decks for classes and private events and a luxury spa with 10 treatment rooms also are highlights for groups.

Here is a sneak peek at what to expect at the five original restaurants planned for The Global Ambassador, along with a members-only eatery.

A Touch of Paris

Le Âme is a Parisian steakhouse that is a nod to traditional French fare. Expect classics like steak frites au poivre and French onion soup and new takes on dishes like pressed chicken coq au vin and tuna carpaccio. The wine and cocktail lists will be true to the restaurant’s Parisian roots and have a larger reach. Breakfast, lunch, dinner, and weekend brunch are on the menu for Le Âme.

Le Market is modeled after a Parisian patisserie. In the morning, look for delicious pastries and espresso. In the evening, go back for cheese selections curated by the in-house fromager paired with natural wines in the evening.

Additional European Style

Situated in the shadow of Camelback Mountain, theà Mediterranean Rooftop is named after the goddess of light. In addition to big views, the elevated venue will serve mezze platters, pasta, coastal seafood with dips, flatbreads, skewers and other items designed for sharing. Cocktails from fresh and house-made ingredients are planned, along with an extensive rosé collection.

For live music, an upscale snack menu, and a mix of classic and craft cocktails with a European flair, guests will want to head to the Lobby Bar. As one of five original restaurants planned for The Global Ambassador, tasty bites like lobster croquettes and house-made potato chips with French onion dip are on the menu along with drinks like Basil & Ginger and Caffe Du Jour. Sip and munch will savoring jazz trios and artist-in-residence nights.

A Taste of Latin America

At the laidback Pink Dolphin, Mexican- and Peruvian-inspired dishes and drinks will complement the poolside setting. A large selection of margaritas and cocktails like guava caipirinhas will be crafted from fresh ingredients and pressed juices. Also dive into Peruvian ceviche or cancha, a shallow-fried, large-kernel corn seasoned with lime and salt. The restaurant spills out onto a covered dining terrace

Rounding out the selection is a members-only club, where members have access to a variety of services, amenities, and a private restaurant, The Grill.
