Demarco Jenkins, owner, has recently announced the opening of d’marcos pizzeria in Sugar Land, TX. The Chicago native is taking a trip down south to stay with the unchanged signature recipes exclusive to d’marcos pizzeria. The recipes making their debut in Texas were a gift to Jenkins from his favorite Chicago Pizzeria, Mama Rigetta’s.
“After my favorite pizzeria abruptly closed in Chicago, and I moved to Houston, I began on a quest to find the classic flavors of Mama Rigetta’s pan pizza with its signature buttery flavored flaky crust, and I came up empty handed. This is when I decided to revive the authentic Italian recipes and culinary techniques from Mama Rigetta’s,” said Jenkins. “I searched for the owners, who had retired, and after several months and offers to purchase the recipes, they graciously decided to gift them to me, to carry on their secret recipes passed down through several generations.”
With the secret recipes come Jenkins’ much-loved buttery flavored flaky crust, marinara and pizza sauces made from scratch with real Italian fresh-ground peeled tomatoes. Italian spice blends will also heighten the flavors of the handmade Italian pork sausage and Italian chicken sausage made with fennel.
Rich and Linda Klaser, former owners of Mama Rigetta’s in Chicago, will join Jenkins at d’marcos pizzeria in June to carry on their legacy. Jenkins plans to carry on the quality of the predecessors with cheese free of additives, fillers and preservatives; and dough rolled out fresh daily from unbleached and untreated flour. Both classic and specialty pizzas will be featured on the signature crust in the forms of both Chicago-style thin crust and deep dish, alongside gluten-free options.
Specialty pizzas will twist conventional pizza recipes for bold flavors while keeping the tradition of Italian cooking in mind. Italian inspired appetizers, sandwiches, pasta dishes and desserts delivered from a local bakery are also making their way onto the menu.
d’marcos pizzeria will be open lunch, dinner and weekends with delivery and catering services daily. Jenkins is planning a grand opening celebration for July 2014 at the location in the Woodbridge Plaza Shopping Center.
